I have had such a busy day today. I had an order for 12 jars of Zesty Blueberry Marmalade and did not have enough in stock, so had to set to and make some more. Then I made even more so that I could accommodate such an order again if it came in tomorrow!
One pan can only make 4 jars at a time as it has to boil really high. My oven will fit 2 pans at once, so that means a maximum of 8 jars at a time.
It takes ages to cut all the peel of the oranges, lemons and lime into the shreds you expect in a marmalade. I do it all by hand of course, which means the shreds are of random size - not like the factory produced stuff in supermarkets.
But that's it for today!
Yesterday I was told that this marmalade is delicious with venison sausages. It was not something I had considered - but why not? Of course it is not so unusual to use orange marmalade in recipes with pork and chicken. Next time we have venison sausages I will have to try this myself - and we do get plenty of Venison here in the West of Scotland.
