January is Marmalade season, and this year is no exception. Here is my first delivery of Seville Oranges - and every single one will be hand cut to produce the lovely strips of peel that you find in marmalade. All my preserves are made by me in my domestic kitchen, in the small batches that my conventional cooker can accommodate!
